Tomato Feta Baked Eggs (Printable)

Baked eggs with grape tomatoes, feta cheese, fresh basil, and Mediterranean herbs on a sheet pan.

# What You'll Need:

→ Vegetables

01 - 2 cups grape tomatoes, halved
02 - 2 cloves garlic, minced
03 - 1 small red onion, thinly sliced (optional)

→ Dairy

04 - 6 oz feta cheese, crumbled

→ Eggs

05 - 8 large eggs

→ Herbs & Seasonings

06 - 2 tablespoons extra-virgin olive oil
07 - 1/2 teaspoon dried oregano
08 - 1/4 teaspoon crushed red pepper flakes (optional)
09 - Salt and black pepper, to taste
10 - 1/3 cup fresh basil leaves, torn or sliced

# How To Make It:

01 - Preheat oven to 400°F. Line a rimmed sheet pan with parchment paper or lightly grease with oil.
02 - Spread halved grape tomatoes, minced garlic, and sliced red onion evenly over the pan. Drizzle with olive oil and sprinkle with oregano, crushed red pepper flakes, salt, and black pepper. Toss gently to coat.
03 - Roast the vegetables in the oven for 10 minutes until they start to soften.
04 - Remove pan from oven. Create 8 small wells among the tomatoes and crack one egg into each. Evenly sprinkle crumbled feta over the entire pan.
05 - Return the pan to the oven and bake for 8 to 10 minutes, or until egg whites are set and yolks are slightly runny or cooked to preferred doneness.
06 - Remove from oven and scatter fresh basil over the top. Serve immediately straight from the pan.

# Expert Suggestions:

01 -
  • One pan means one thing to wash, which honestly changes everything on a busy morning.
  • The eggs bake gently while feta melts into pockets of warmth and tomatoes burst with their own juices.
  • It looks far more impressive than the minimal effort it actually requires.
02 -
  • Don't skip the initial 10-minute tomato roast; those few minutes transform them from raw to juicy, and the liquid they release becomes part of the magic.
  • Watch the eggs after minute 7 because they go from runny to overdone faster than you'd think, and every oven has its own temperament.
03 -
  • Use the best feta you can find because it's one of just a few ingredients, and mediocre feta makes the whole thing taste a little sad.
  • If your oven runs hot, start checking the eggs around the 7-minute mark so you don't accidentally hard-boil them.
