13 - 2 tablespoons soy sauce
14 - 1 tablespoon fish sauce, optional

17 - 2 large eggs, lightly beaten

# How To Make It:
01 - In a medium bowl, combine diced chicken with 1 tablespoon soy sauce, cornstarch, and black pepper. Toss to coat evenly and let stand for 10 minutes.
02 - Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Add marinated chicken and stir-fry until cooked through, approximately 4 to 5 minutes. Transfer to a clean plate.
03 - Add remaining vegetable oil to the pan. Add minced garlic, diced carrot, and diced bell pepper. Stir-fry for 2 to 3 minutes until vegetables are just tender-crisp.
04 - Push vegetables to the side of the pan and pour beaten eggs into the empty space. Allow to set for 30 seconds, then scramble and incorporate with the vegetables.
05 - Add cooked jasmine rice to the pan, breaking up any clumps with the spatula. Stir-fry for 2 minutes until rice is heated through and combined with other ingredients.
06 - Return cooked chicken to the pan along with diced pineapple, frozen peas, and sliced green onions. Mix thoroughly to distribute ingredients evenly.
07 - In a small bowl, whisk together sweet chili sauce, 2 tablespoons soy sauce, fish sauce, and sesame oil. Pour sauce over rice and toss all ingredients until evenly coated and heated through.
08 - Remove from heat. Transfer to serving bowls or plates. Garnish with roasted cashews or peanuts, chopped fresh cilantro, and lime wedges.
