A vibrant layered jar blending creamy chia, sweet strawberry, and delicate matcha for a refreshing snack.

# What You'll Need:

→ Chia Pudding Base

01 - 1/2 cup chia seeds
02 - 2 cups unsweetened almond milk
03 - 2 tablespoons maple syrup or honey
04 - 1 teaspoon vanilla extract

→ Strawberry Layer

05 - 1 1/2 cups fresh strawberries, hulled
06 - 1 tablespoon fresh lemon juice
07 - 1 tablespoon maple syrup or honey

→ Matcha Layer

08 - 1/2 cup coconut yogurt or Greek yogurt
09 - 1 teaspoon matcha green tea powder
10 - 1 tablespoon maple syrup or honey

→ Toppings

11 - Fresh strawberries, sliced
12 - Toasted coconut flakes
13 - Granola

# How To Make It:

01 - Whisk together chia seeds, almond milk, maple syrup, and vanilla extract in a medium bowl. Stir thoroughly, allow to rest for 10 minutes, then whisk again to prevent clumping. Cover and refrigerate for minimum 4 hours or overnight until pudding reaches desired thickness.
02 - Combine strawberries, lemon juice, and maple syrup in a blender. Blend until achieving smooth consistency. Transfer to refrigerator until assembly.
03 - Combine coconut yogurt, matcha powder, and maple syrup in a small bowl. Mix thoroughly until achieving uniform green color and smooth texture.
04 - Distribute chia pudding evenly into bottom of each serving jar. Layer strawberry puree over pudding, then matcha yogurt layer on top. Repeat layering sequence if desired for visual depth.
05 - Top each jar with fresh strawberry slices, toasted coconut flakes, or granola as desired. Serve chilled immediately or store refrigerated until serving.

# Expert Suggestions:

01 -
  • It looks incredibly impressive but requires almost no cooking skills, just patience and a blender.
  • You can make four servings at once and grab them straight from the fridge when you need breakfast or a snack without thinking.
02 -
  • The chia pudding must chill for at least four hours or it will be watery instead of creamy, and I learned this the hard way by trying to eat one after two hours and being disappointed.
  • Matcha powder clumps if you don't whisk it with a small amount of sweetener first, so don't skip that step or you'll have little specks of grainy powder in what should be a smooth layer.
03 -
  • Whisk the matcha with a small amount of the maple syrup or hot water before adding yogurt, which dissolves lumps that will otherwise ruin the smooth texture of that layer.
  • Make the strawberry puree the day before if you can, because the flavors deepen overnight and taste less like raw fruit and more like concentrated strawberry essence.
